When we moved back to Singapore from Seattle, one of the first places we went to eat was Humpback because we loved the fact that that they specifically had oysters from Washington. We went back again on Christmas Day.
While the layout and interior have been revamped and revised, the food remains the same – outstanding.
Our selection of Oysters – we tried three kinds – Calm Cove, Eld Inlet and Hammersly Inlet.
While all three were great, we all preferred the Eld Inlet, the largest one which was sweet an fruity tasting.
For a smaller light dish we went with White Asparagus over Blue Crab and White Miso. This was refreshing and light on the stomach.
We also went with Cavatelli with Swordfish Bacon and Corn. This was a flavor bomb for us. It was so delicious.
For the main we had the Marble Goby with Broccolini and Black Garlic. So tender and soft and the grill made the skin nice and crispy.
To wind up the meal they served us the Castella Cake on the house. What a great Christmas Gift from them!
