This year we wanted to head to Sentosa for our Chinese New Year Celebration Dinner for the company. So we decided to choose Chinois. I had been here before and I found the food great, so thought we would try this.
Resorts World Sentosa was all decked out for CNY, some nice Year of the Snake decorations.
After a little photo taking, it was off to eat!
Chinois is located at the Hotel Michael, right next to Joel Robuchon’s restaurant, where the Degustation Menu is $545 per pax!

Because the menu is meant for 10 persons, the 8 of us would have to do extra duty. But here is our menu, it sounds yummy!
北奇贝,鲑鱼,炸鱼皮捞生 – Hokkigai, Salmon with Crispy Fish Skin ‘Yu Sheng’
菜胆鸡汤鲍翅 – Double-boiled Superior Shark’s Fin with Cabbage in Thick Chicken Broth
壶底蔭豉爆虾球伴山葵虾球 – Combination of Wok-fried Prawns with Supreme Black Bean Paste and Wasabi-Mayo Prawns
豉油皇脆炸顺福鱼- Crisp-fried Marble Goby with Supreme Soya Sauce
无锡肉排配炸馒头 – Wu Xi’ Style Braised Pork Ribs with ‘Mantou’
发财鲍脯金蚝北菇时蔬 – Braised Sliced Abalone with Dried Oysters, Shiitake Mushrooms and Seasonal Vegetables
X.O. 酱脆米腊味荷叶饭 – Wok-fried Waxed Meat Rice with X.O. Sauce and Crispy Rice served with Lotus Leaf
金瓜紫米露伴椰雪花 – Black Forbidden Rice with Pumpkin Cream and Coconut Ice Cream
We started off with an appetizer of Tung Lok’s own Bak Kwa with Wasabi Mayo. Quite nice, the mayo with it enhanced the flavor nicely.
We didn’t really order drinks, but CK’s coffee came like this.
Our first course was the Yu Sheng.

As it appeared, all the other things were besides it.

All done with the Lo Hei, and here’s the result!
Sauce very nice, the salmon skin was great and crispy, the fish fresh, and it was all just right. Great start.
The next course was the soup.
菜胆鸡汤鲍翅 – Double-boiled Superior Shark’s Fin with Cabbage in Thick Chicken Broth
The soup, aside from being very, very hot, was very flavorful. The Shark Fin was nicely boiled, the chicken was tender and the cabbage made it nice and sweet.
Next up:
壶底蔭豉爆虾球伴山葵虾球 – Combination of Wok-fried Prawns with Supreme Black Bean Paste and Wasabi-Mayo Prawns
The dish came out and it smelled great. The prawns were amazing, great taste, crisp and fresh. The Wasabi Mayo ones were better, but still, great dish. The asparagus is also great, fresh and crisp.
豉油皇脆炸顺福鱼- Crisp-fried Marble Goby with Supreme Soya Sauce
I thought that this was going to be pieces of fish, but then the whole fish came out. It was awesome. Meaty, fried nice and crisp, the soya sauce made it great. Just a great fish.
We’re all getting really full right now, but, we soldier on!
无锡肉排配炸馒头 – Wu Xi’ Style Braised Pork Ribs with ‘Mantou’
This came off the bone, and it should have been Mantiao, not Mantou, as it was a long cigar shape on the Mantou. The flavor very nice, some sweet, like Wuxi style for sure. And the pork just melted when you ate it.

Abalone. Yum.
We’re getting closer and closer to the end. We were all looking forward to:
X.O. 酱脆米腊味荷叶饭 – Wok-fried Waxed Meat Rice with X.O. Sauce and Crispy Rice served with Lotus Leaf
But by the time it came, we were all pretty full and didn’t know if we could make it. But we did.
The rice was nice. Every grain looked nicely coated, the additions were nice and sweet and some crispiness also. Great fried rice.
And last but not least, it was time for dessert.
金瓜紫米露伴椰雪花 – Black Forbidden Rice with Pumpkin Cream and Coconut Ice Cream
In the picture you can’t really see the rice, but it’s there, not a lot of it so it was quite nice. The pumpkin cream was nice, not too sweet and the coconut ice cream was nice and icy.
A very very very nice meal and very tasty too. Highly recommended for fine dining Chinese style.
