Pike Place Market is a great place to visit in Seattle, and one of the stops you have to make is Beecher’s Handmade Cheese. It is a nice little shop where they make their own cheese and offer you some lovely cheese-related food.
You walk in and it’s a pleasant atmosphere. You have the food counter up front and then the cheese cases in the back.

OK, enough of that, let’s get to the food.
Here is their Cafe Menu. Lots of things to look at and decide upon.
I wanted to keep it simple. I wanted to taste their cheese and I wanted it a number of ways. So I went with the plain Mac and Cheese.
Pretty thick, there was a nice tang to it. They make their own cheese, called Flagship, and this has a real sharp bite to it, like nice sharp cheddar. You can taste it in the Mac and Cheese. They add some Jack cheese to it and it is really nice.
I would have liked it a bit thicker, but the consistency and flavor is there and it’s nice.
Next up was the Grilled Cheese. I wanted it plain and simple again, just taste the cheeses.
Uwrap it and it’s on a nice two slices of rye.
Separate it a little and watch the cheese run!

You can taste the cheese again. A little too much butter on the bread when grilled, so it’s a little greasy, I would prefer it a little less greasy, but a nice sandwich!
