Good ramen joints are hard to find. But they pop up in the US, and in Seattle Kukai is a Japanese import and the ramen is awesome! They have 3 outlets in the Seattle area, we went to the one in Bellevue.
Tonkatsu Shoyu Ramen. Broth was nice and rich, but the Chasu a little tough, not exactly melt in your mouth.
The Regular Shoyu Ramen. A little lighter broth, but still quite nice.
The ramen itself was good, nice and springy and you can get it done to your doneness, softer, harder, etc.
Definitely good to come again.
