I have been trying to avoid Red Meat for a bit and thought it might be tough on a trip to Hanoi, but it really wasn’t.

Instead of Beef Pho, I went for Chicken Pho at Phở Gà Nguyệt.

I ordered the Soup version with Breast and Thigh while my colleague went for the dry version of the same.

The stock is definitely Chicken stock. Deep and rich with Chicken flavor. The Pho silky smooth and the Chicken tender.

You don’t need Beef for good Pho!
