I am one of those people that tolerate Las Vegas. I never go for vacation there, but if I have to go there for work, I am going to make the best of it. Which means eating at Celebrity Chef restaurants. Some are dumbed down for the crowd, some are just plain good.
It RM Seafood good? Rick Moonen shut down his New York restaurant to open this one in Mandalay Bay. It’s supposed to be great for seafood and comes recommended by my sister.

Started out with the famous RM Crabcake. The texture was nice, not a lot of breadcrumbs, and plenty of crab. Fried nicely and wish there was a little more sauce. The little slaw on the side doesn’t make a lot of sense, but it’s there to even out the hint of oil from the crabcake.
I couldn’t leave without trying some sushi, after all, it’s also one of his signatures.
This is the Summer Roll. It is Tempura King Crab, Big Eye Tuna, Spicy Tuna and Jalapenos with Lemon.
Wow, so good. The tuna drowns out the crab a little bit, but it is good. Pleasing to eat, pleasant to the tongue.
And last, but definitely not least, the Surf and Surf. Gulf Shrimp with Lobster Tail on Black Truffle Mushroom Risotto.
Can you say rich? Can you say decadent? Can you say divine?
It is all of that and more.
So delightful and just a great eat. I loved every single bite and slowed down so I could enjoy it more and more.
My first night in Vegas and I am off to an absolutely fabulous start. I would be back here in a heartbeat!
