How can you come to Italy and not have Gelato? One of the best known institutions in Bologna is Cremeria Cavour.
A huge selection of flavors to choose from did not make it easy, but I always go for different flavors than is normally found.
I started with a base of Pink Grapefruit (Pompelmo Rosa), then added in Cavour (Ricotta Cheese, Amalfi Lemons and Shortbread), then topped it off with 50 Special (Mascarpone with a touch of coffee and Chocolate Cake bits).
